Favorite Recipes – Spicy Garlic Aioli

This recipe is a long-time favorite at our campouts. Aioli is essentially a “kicked up” mayonnaise, and is often flavored with roasted peppers, garlic, lemon, Greek olives, or basil. It can be used as a dip for bread or vegetables, spread on sandwiches or burgers, or served with fish or shellfish. It’s super tasty and really easy to make:

  • 2/3 cup mayonnaise
  • 2-3 cloves garlic, pressed or finely chopped
  • 1 T. lemon juice
  • 1 tsp. Dijon mustard
  • 1/2 tsp. cayenne (more or less if you love or hate a little heat)

Just combine and mix all ingredients together. You might choose to use a food processor so that you don’t have bits of garlic. Enjoy!

A note from new member Jason Stout

We received this wonderful note from Jason Stout, a new member to our unit, in March:

My name is Jason Stout and my wife is Lynne.  This was our first trip with the group and I have to say we had an awesome time! Everyone was so nice and friendly ,we had a chance to check out a lot of the other rigs and get some great ideas from the other members. Both nights we enjoyed the fire pit with other members and got to share stories and tell jokes.  This is what camping is all about. Good people, great food, and good times! Cheers!

Southwest Breakfast Strata Recipe

From, we are posting the recipe for the Southwest Breakfast Strata that everyone enjoyed so much at our recent Rally.

“This recipe received our highest rating. You can prepare it the night before and pop it in the oven just before breakfast. Let stand at room temperature 30 minutes before baking.”


  • 1 pound mild ground pork sausage
  • 1 small onion, chopped
  • 1/2 green bell pepper, chopped
  • 2 (10-ounce) cans diced tomatoes and green chiles
  • 8 (10-inch) flour tortillas, torn into bite-size pieces
  • 3 cups (12 ounces) shredded colby-Jack cheese blend
  • 6 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  1. Cook sausage in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink. Drain and return to skillet.
  2. Add chopped onion and bell pepper to sausage in skillet, and sauté over medium-high heat 5 minutes or until vegetables are tender. Stir in tomatoes and green chiles; reduce heat and simmer 10 minutes.
  3. Layer half each of tortilla pieces, sausage mixture, and cheese in a lightly greased 13- x 9-inch baking dish. Repeat layers.
  4. Whisk together eggs, milk, salt, and pepper; pour over layers in baking dish. Cover and chill up to 8 hours, if desired.
  5. Bake, lightly covered with aluminum foil, at 350° for 30 minutes or until golden and bubbly. [Note: In our oven, we found it took closer to 60 minutes – your mileage may vary!]
